Irresistible bite-sized cupcakes with Boston cream pie flavor and chocolate ganache topping - perfect for any party!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ French Vanilla Cake Mix
  • 3/4 cup water
  • 1/3 cup butter, melted
  • 2 eggs
  • 1 cup prepared vanilla pudding
  • 1 cup semisweet chocolate chips
  • 3/4 cup whipping cream
Instructions:
  • Preheat your oven to 350°F. Grease 48 mini muffin cups generously with shortening or cooking spray, then lightly dust with flour.
  • Combine cake mix, water, melted butter, and eggs in a large bowl until just mixed. Evenly spoon batter into muffin cups.
  • Bake the cupcakes for 9 to 12 minutes, or until they spring back when lightly touched in the center. Allow them to cool in the pans for 5 minutes, then transfer to cooling racks. Let them cool completely for about 15 minutes.
  • Carefully remove the tops of the cupcakes using a sharp knife. Place 1 teaspoon of pudding onto the center of the bottom half of each cupcake. Place the top halves of the cupcakes back on.
  • Place chocolate chips and whipping cream in a small microwave-safe bowl. Microwave on High for 45 to 60 seconds until chips are melted and mixture is smooth. Allow it to sit for 10 to 15 minutes until thickened. Spread the mixture on top of each bite over waxed paper and refrigerate until set, approximately 10 minutes. Keep refrigerated after.
