Transform store-bought sugar cookie dough into a delectable crust for these delightful mini Boston cream pie dessert cups.
Ingredients:
  • 1 (16 ounce) package refrigerated sugar cookie dough
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup sour cream
  • 0.5 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon milk
  • 2 eggs
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 1 (16 ounce) container prepared chocolate frosting
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C. Line 24 muffin cups with paper liners and place a portion of sugar cookie dough in each.
  • Bake in the preheated oven for 8 to 10 minutes until the cookie dough softens and spreads in the muffin cups. Set aside after removing from the oven.
  • Using an electric mixer, blend cream cheese, sour cream, sugar, flour, and milk until smooth. Add one egg at a time until fully combined, then mix in the instant pudding until just incorporated. Scoop 2 tablespoons of the filling into each muffin cup and bake until set for about 25 minutes. Allow to cool in the pans for 30 minutes before serving.
  • Microwave the prepared frosting without the foil cover for 30 seconds until softened. Stir until smooth, then spread a tablespoon of frosting onto each dessert cup. Chill in the refrigerator for about 1 hour until set.
