Tender baby bok choy braised in savory chicken stock and soy sauce for a simple and delicious Asian side dish.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 4 large heads baby bok choy, halved lengthwise, or more to taste
  • 0.25 cup chicken stock
  • 3 tablespoons soy sauce
Instructions:
  • Heat oil in a skillet over medium-high heat until it shimmers. Add bok choy and cook until lightly golden on both sides, around 2 minutes. Pour in stock and soy sauce, then cover and simmer over medium heat until bok choy is tender, about 5 minutes.
  • Transfer to a beautiful serving platter, keeping the delicious liquid in the skillet.
  • Reduce liquid over medium-high heat for 1 to 2 minutes until it thickens, then drizzle over bok choy before serving.
