BBQ pulled pork: Spicy, tangy, sweet. Ideal for parties and potlucks.
Ingredients:
  • 1 (3 pound) pork tenderloin, trimmed
  • 1 teaspoon ground black pepper
  • 0.5 cup cider vinegar
  • 0.33333334326744 cup water
  • 1 large onion, chopped
  • 2 tablespoons prepared yellow mustard
  • 2 slices lemon, seeded
  • 1 tablespoon unsalted butter
  • 2 teaspoons honey
  • 0.5 teaspoon cayenne pepper
  • 1 cup ketchup
  • 4 tablespoons Worcestershire sauce
Instructions:
  • Preheat the oven to 300°F (150°C) for the perfect cooking temperature.
  • Preheat a Dutch oven over medium-high heat. Season pork with salt and pepper, then sear in the hot Dutch oven on all sides for about 5 minutes total. Remove and set aside.
  • In a Dutch oven, simmer a flavorful mix of vinegar, water, onion, mustard, lemon slices, butter, honey, and cayenne for 20 minutes. Remove lemon, then stir in ketchup and Worcestershire sauce. Bring to a boil before adding pork and tightly covering with a lid or foil.
  • Cook in the center of the preheated oven for about 3 hours until the meat easily shreds with a fork. Occasionally check and add water if needed. Take out from the oven and shred the pork into the sauce using 2 forks.
