Elevated homestyle pot roast with rich earthy flavors, perfect with mashed potatoes, buttery noodles, or crusty bread.
Ingredients:
  • 3.5 pounds boneless beef chuck roast
  • 5 teaspoons kosher salt, divided
  • 2.5 teaspoons freshly ground black pepper, divided
  • 2 teaspoons garlic powder
  • 4 teaspoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound cremini mushrooms, halved
  • 3 medium carrots, cut into 2 inch pieces
  • 1 head garlic, cut in half lengthwise
  • 1 cup red wine
  • 3 sprigs thyme
  • 2 bay leaves
  • 2 teaspoons Worcestershire
  • 2 cups beef broth, or more as needed
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Begin by assembling all the ingredients for your recipe, then preheat the oven to 350 degrees F (175 degrees C).
  • Evenly coat beef pieces with a flavorful blend of 3 1/2 teaspoons of salt, 2 teaspoons of pepper, and garlic powder.
  • In a large skillet over high heat, heat oil until sizzling. Add beef and let it sear without moving until a rich golden crust forms, about 4 minutes. Flip the pieces and sear all sides until browned. Set the meat aside once done.
  • Heat 2 tablespoons of butter in the same skillet over medium-high heat. Once the butter has melted, add onion, mushrooms, and carrots. Cook for 5 minutes, stirring frequently and scraping the bottom to release any browned bits. Then, add garlic and cook for 1 more minute.
  • Add wine to the pan and deglaze it to release all the flavorful bits. Put the meat back in the pan with its juices and add thyme, bay leaves, and Worcestershire sauce.
  • Pour enough beef broth to reach 2/3 up the beef, ensuring the meat is not fully submerged. Simmer the mixture.
  • Roast in the oven, covered, until the meat is melt-in-your-mouth tender, for 2 to 2 1/2 hours.
