Braised Beef Short Ribs

Hearty tomato-based stew with tender meat, potatoes, carrots, and garlic, simmered to perfection.
Ingredients:
  • 0.5 cup all-purpose flour for coating
  • 2 teaspoons salt
  • 1 pinch ground black pepper
  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1 cup stewed tomatoes
  • 1 clove garlic, minced
  • 6 potatoes, peeled and cubed
  • 3 onions, chopped
  • 6 carrots, chopped
  • 1.5 tablespoons all-purpose flour
  • 4 tablespoons water
Instructions:
  • Mix together 1/2 cup of flour with salt and ground black pepper in a bowl. Coat the ribs with the seasoned flour.
  • In a large pot or Dutch oven, heat the oil until shimmering. Sear the ribs until golden and caramelized on all sides. Add 1 cup boiling water, tomatoes, and garlic. Lower the heat, cover, and gently simmer for 1 1/2 hours, adding additional water as needed to keep everything moist and tender.
  • Add the potatoes, onions, and carrots to the pot and simmer for 30 minutes to 1 hour until vegetables are tender. Transfer the meat and veggies to a serving platter.
  • Whisk together 1 1/2 tablespoons flour and 2 tablespoons water until smooth. Gradually add to the pot, stirring constantly until the sauce thickens. Drizzle over meat and vegetables before serving.
