Braised Brisket of Beef

Savor savory brisket with flavorful new potatoes and steamed carrots.
Ingredients:
  • 1 fresh beef brisket (not corned beef), 3 lb
  • 1 1/2 cups white wine vinegar
  • 1 bottle (12 oz) chili sauce
  • 1/4 cup packed brown sugar
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 2 medium onions, thinly sliced
  • Chopped parsley, if desired
Instructions:
  • In a resealable plastic bag or 3-quart casserole, put the beef, cutting it in half if needed to fit. In a medium bowl, mix vinegar, chili sauce, brown sugar, basil, and salt until well combined. Pour the mixture over the beef, make sure it's coated all around. Seal the bag or cover the casserole and refrigerate. Turn the beef once during the marinating process. Marinate for at least 8 hours but no longer than 24 hours.
  • Preheat oven to 325°F. Place beef and marinade in a Dutch oven or casserole dish. Top with onions, cover, and roast for 2 hours, brushing beef with marinade twice.
  • Uncover the dish and continue roasting for an additional hour, basting the beef regularly with the marinade until the beef reaches a tender texture. Allow the dish to rest covered for 10 minutes before serving.
  • Slice the beef thinly across the grain and place the slices on a serving platter. Top with the onions using a slotted spoon and sprinkle with parsley. Dispose of the cooking liquid.
