Speedy braised chicken with 6 shortcuts for busy weeknights.
Ingredients:
  • 2 medium lemons
  • 450g packet chicken thigh steaks ( lemon and herb - see Notes)
  • 510.00 gm chicken style liquid stock
  • 250.00 ml couscous
  • 250.00 ml frozen peas
  • 125.00 ml fresh flat-leaf parsley leaves, roughly chopped
Instructions:
  • Juice one vibrant lemon, then halve and thinly slice the other one.
  • In a large, heavy-based frying pan over medium-high heat, heat oil. Brown chicken on each side for 1 to 2 minutes. Pour in 1 cup of stock and lemon juice, season with pepper, cover, and reduce heat to medium-low. Cook for 5 minutes until chicken is cooked through. Transfer chicken to a plate, cover, and add lemon slices to the pan. Simmer for 3 to 4 minutes until the sauce thickens slightly.
  • In a saucepan over high heat, bring stock to a boil and then remove from heat. Add couscous and peas, stirring to combine. Cover and let it sit for 5 minutes until liquid is absorbed. Finally, fluff the couscous with a fork to separate the grains.
  • Sprinkle fresh parsley over fluffy couscous. Mix gently to infuse flavors. Plate juicy chicken alongside couscous and generously drizzle with sauce before serving.
