Indulge in our nutritious braised chicken with spinach and lentils for a healthy, satisfying meal.
Ingredients:
  • 27.30 gm olive oil
  • 4 x 170g chicken breast fillets, cut into 3cm cubes
  • 1 celery stalk, finely chopped, plus 1 tbsp chopped celery leaves
  • 2 garlic cloves, finely chopped
  • 2 tsp chopped thyme leaves
  • 250ml chicken stock
  • 120g baby spinach leaves
  • 2 x 400g cans brown lentils, rinsed, drained
  • 4 crusty bread rolls, to serve
Instructions:
  • In a hot deep frypan, brown chicken in batches for 3-4 minutes until golden. Set aside.
  • Lower heat to medium and add onion, celery, garlic, and thyme. Season well and cook for 5 minutes, stirring occasionally, until veggies are tender. Add chicken back to the pan with stock, bring to a boil, cover, and simmer over low heat for 10 minutes or until chicken is done.
  • Combine spinach, celery leaves, and lentils in the pot and cook for 3-4 minutes until the spinach wilts and the lentils are heated through. Serve with crusty bread.
