French peas with a modern twist - quick, easy, and delicious!
Ingredients:
  • 1 knob of butter
  • olive oil
  • 1 heaped teaspoon flour
  • 285 ml organic chicken or vegetable stock
  • 6 spring onions trimmed, outer leaves discarded, and finely sliced
  • 400 g fresh or frozen peas
  • 2 little gem lettuces sliced
  • sea salt
  • freshly ground black pepper
  • 1 lemon juice of
  • good-quality extra virgin olive oil
Instructions:
  • Gently warm the butter and a generous splash of olive oil in a pan. Incorporate the flour and stir well before gradually adding in the stock. Increase the heat, and introduce the spring onions, peas, and lettuce along with a dash of salt and pepper to the mix. Cover with a lid and let it simmer for 5 minutes, or until tender. Taste, adjust the seasoning, and finish with a squeeze of fresh lemon juice. Serve with a drizzle of high-quality olive oil. Pair it with a piece of fish for a delightful meal.
