Try this crowd-pleasing Brazilian fried chicken with added crunch from matchstick potatoes. Perfect for watching the game with friends, it's a tasty twist on a traditional dish.
Ingredients:
  • 450 g skinless, boneless free-range chicken thighs or breasts
  • 2 cloves of garlic
  • 1 onion
  • 2-3 tablespoons cheiro verde (equal quantities of chopped flat-leaf parsley and spring onion)
  • 5 tablespoons fresh lime juice
  • 125 g plain flour
  • 2 teaspoons tempero baiano seasoning
  • 1 large baking potato (about 100g)
  • vegetable oil for deep frying
  • 1 sprig of fresh flat leaf parsley
  • chilli mayonnaise
Instructions:
  • Dice the chicken into 3cm pieces and transfer to a large bowl. Finely chop the onion and garlic, and add them to the chicken along with the cheiro verde and lime juice. Season generously with salt and pepper, then mix well and marinate for 20 to 30 minutes or chill for a couple of hours. Combine flour, baking powder, and tempero baiano in a separate bowl. Grate the peeled potato finely over the flour mixture using a mandolin, ensuring matchstick-like pieces. Coat the potatoes with the flour mixture thoroughly. Heat oil in a deep-fat fryer to 180°C/350°F. Add the coated chicken and potato matchsticks in batches, frying for 2 to 3 minutes per side until golden and crispy. Drain on paper towels to remove excess oil. Sprinkle with chopped parsley and a pinch of salt before serving hot with chili mayonnaise on the side.
