Brazilian stew with chicken thighs, onion, and tomatoes - a sweet and savory weeknight delight.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 tablespoon white sugar
  • 2 pounds bone-in, skin-on chicken thighs, or more to taste
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 large onion, chopped
  • 0.5 (14.5 ounce) can petite diced tomatoes, or more to taste
  • 1 cup chicken broth, or more as needed
Instructions:
  • In a deep skillet over low heat, warm the oil. Sprinkle sugar evenly over the bottom. Season chicken thighs with salt and pepper, then cook in batches until golden brown on both sides, for about 5 minutes per side.
  • Place the golden-brown chicken on a serving plate and gently peel off the skin.
  • Sauté onion in the skillet until softened for 5 to 10 minutes. Add tomatoes, then place the chicken back in. Pour in enough broth to cover the chicken halfway. Simmer with the lid slightly ajar until the chicken is tender and cooked through, approximately 1 hour.
