Indulge guilt-free with this delicious low-fat bread pudding!
Ingredients:
Meltedbutter, for greasing
330g (about 1/2 loaf) square unsliced white bread
95g (1/2 cup) sultanas
65g (1/3 cup firmly packed) brown sugar
26.40 gm breakfast marmalade
600mls reduced-fat milk
20.00 ml Grand Marnier, Cointreau or orange-brandy liqueur flavouring
Instructions:
Preheat your oven to 180°C. Use melted butter to lightly grease a 1.5 litre (6 cup) ovenproof dish.
Remove crusts from bread and cut into 2.5cm cubes. Layer half of the bread on the bottom of a greased dish. Sprinkle half of the sultanas and half of the brown sugar evenly. Repeat the layering process with the remaining bread, sultanas, and brown sugar. Melt marmalade in a small saucepan over medium-low heat. Brush melted marmalade onto the top layer of bread using a pastry brush, moving any sugar aside if needed.
Whisk eggs in a jug until light. Stir in milk and liqueur until combined. Pour mixture over bread evenly and press gently to soak. Let it sit for 20 minutes.
Bake in the oven until the custard sets in the center and the top layer of bread is a dark golden color. Let it stand for 10 minutes before serving.
