Bread Pudding with Bourbon Sauce (lighter recipe)

Elevate your go-to comfort dish with a healthier twist!
Ingredients:
  • 2 cups fat-free (skim) milk
  • 2 tablespoons margarine
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon or ground nutmeg
  • 1/4 teaspoon salt
  • 1 egg
  • 2 egg whites
  • 6 cups dry bread cubes (8 slices)
  • 1/2 cup raisins, if desired
  • 1 cup fat-free caramel sauce
  • 1 tablespoon bourbon or 1 teaspoon brandy extract
Instructions:
  • Preheat the oven to 350°F. In a 2-quart saucepan, gently heat the milk and margarine over medium heat until the margarine is melted and the milk is hot.
  • Combine sugar, cinnamon, salt, egg, and egg whites in a large bowl using a wire whisk until thoroughly combined. Mix in bread cubes and raisins. Stir in the milk mixture. Transfer the mixture into an ungreased 1 1/2-quart casserole or an 8-inch square (2-quart) glass baking dish. Place the casserole dish into a 13x9-inch pan and carefully pour boiling water into the pan until it reaches 1 inch deep.
  • Bake without a cover for 40 to 45 minutes, or until a knife inserted 1 inch from the edge of the casserole comes out clean.
  • Combine the luscious caramel sauce with a splash of rich bourbon in a small bowl until velvety. Drizzle the indulgent sauce over the comforting warm bread pudding and chill any remaining portions in the refrigerator for later enjoyment.
