Breakfast quinoa salad

Start your day right with a nourishing and delicious breakfast option.
Ingredients:
  • 135g (2/3 cup) quinoa, rinsed, drained
  • 330ml (1 1/3 cups) water
  • 2 navel oranges
  • 1.25 gm ground 
cinnamon
  • 40.00 ml pepitas
  • 40.00 ml natural almonds, 
chopped
  • 125g fresh blueberries
  • 190g (2/3 cup) natural 
yoghurt, to serve (optional)
  • Ground cinnamon, extra, to serve
Instructions:
  • In a saucepan over medium-high heat, combine quinoa and water. Bring to a boil, then cover and simmer on low for 12 minutes until the water is absorbed and quinoa is tender. Transfer to a large bowl and let cool.
  • Peel and separate the oranges into a bowl, saving the juice. Add the orange segments, juice, cinnamon, pepitas, almonds, and half of the blueberries to the cooked quinoa. Mix well.
  • Distribute quinoa evenly in bowls, add the rest of the blueberries on top, spoon yogurt (if desired), and sprinkle with extra cinnamon.
