Elevate your breakfast routine with our simple fruit salad.
Ingredients:
  • 125.00 ml tri-colour quinoa
  • 2 passionfruit, halved
  • 21.00 gm lime juice
  • 500g piece watermelon, peeled, very thinly sliced
  • 250g strawberries, hulled, quartered
  • 125g raspberries
  • 150g cherries, pitted, halved
  • 1 jazz apple, thinly sliced crossways
  • 40.00 ml finely shredded fresh mint leaves
Instructions:
  • Prepare quinoa in a medium saucepan according to package instructions. Drain excess water and rinse under cold water before draining again.
  • In a jug, mix passionfruit pulp and lime juice. Arrange the fruit on a serving platter and top with quinoa. Drizzle the passionfruit mixture over the salad and sprinkle with fresh mint. Serve and enjoy!
