Spicy Asian quinoa egg breakfast for a healthy morning kick.
Ingredients:
  • 2 cups water
  • 1 cup quinoa, rinsed and drained
  • 0.25 teaspoon salt
  • 1.5 teaspoons olive oil, or as needed
  • 1 medium bell pepper, chopped
  • 1 tablespoon sliced green onions
  • 1 clove garlic, minced
  • 3 large eggs, whisked
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce, or to taste
Instructions:
  • In a pot over medium-high heat, bring water, quinoa, and salt to a boil. Cover, reduce heat to medium-low, and simmer for about 15 minutes until all water is absorbed. Remove from heat and fluff with a fork.
  • In a skillet over medium heat, warm olive oil. Add bell pepper and saute until tender, around 5 minutes. Introduce garlic and saute until aromatic, about 30 seconds. Pour in eggs; cook and stir until fully cooked, approximately 5 minutes.
  • Combine the egg-vegetable mixture with the quinoa, then stir in soy sauce and sriracha. Finish by topping with green onions for a delicious finish.
