Savor the delicious Asian-inspired low-fat chicken noodle dish!
Ingredients:
  • 450g pkt fresh thin hokkien noodles
  • 500g single chicken breast fillets, trimmed
  • 9.20 gm olive oil
  • Salt & freshly ground pepper
  • 200g snow peas, cut into thin strips
  • 110g bean shoots
  • 1 carrot, peeled, cut into matchsticks
  • 80ml sweet chilli sauce
  • 2 limes, juiced
  • 48.80 gm fish sauce
Instructions:
  • Prepare the noodles as directed on the package. Rinse with cold water until cool, drain thoroughly, and set aside.
  • Heat up a barbecue plate or frying pan over medium heat. Brush both sides of the chicken with oil and generously season with salt and pepper. Cook for 4 minutes on each side or until fully cooked. Remove from heat and let it rest on a plate for 5 minutes before slicing.
  • Toss together the noodles, snow peas, bean shoots, carrot, and chicken in a large bowl.
  • Combine the chili sauce, lime juice, and fish sauce in a bowl, whisking until well mixed. Pour over the noodles and toss to ensure everything is coated thoroughly. Serve promptly.
