Chilli chicken and mandarin stir-fry

Spicy chicken stir-fry with a touch of sweetness from mandarins.
Ingredients:
  • 450g fresh thick rice noodles
  • 1 bunch Chinese broccoli, leaves and stems separated
  • 9.20 gm oil
  • 3 single chicken breast fillets, cut into thick strips
  • 45g almond
  • 1 long red chilli, deseeded, sliced
  • 1 tsp finely grated fresh ginger
  • 42.00 gm soy sauce
  • 7.20 gm honey
  • 3 mandarins, peeled, segmented
Instructions:
  • Cook the noodles as per the package directions. Slice the Chinese broccoli stems in half, quarters, or lengthwise based on their thickness.
  • Heat oil in a wok or large deep frying pan over medium-high heat. Stir-fry chicken in two batches for 4 minutes until cooked through. Cover with foil and set aside.
  • Toss in the Chinese broccoli stems and almonds and stir-fry for 2 minutes. Introduce the garlic, chili, and ginger and stir-fry for another 30 seconds.
  • Mix together the soy sauce and honey. Add Chinese broccoli leaves, mandarin segments, and the soy sauce mixture to the wok or pan. Stir-fry until the leaves are tender, then toss in the noodles until fully coated.
