Ingredients:
  • 2 cups water, milk or soy milk
  • 1 cup quinoa, rinsed
  • 1/4 teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries (thawed)
  • 1/4 cup toasted pecans or walnuts
  • Maple syrup (optional)
Instructions:
  • In a small saucepan, bring water to a boil. Stir in quinoa and simmer covered on low heat for 15 minutes until liquid is absorbed, resulting in a moist mixture.
  • Sprinkle in fragrant cinnamon. Serve the fluffy quinoa in bowls. Garnish generously with fresh blueberries, crunchy nuts, and sweeten with a drizzle of maple syrup to your liking.
