Quinoa breakfast bowl with blueberries and lemon - a tasty twist on oatmeal.
Ingredients:
  • 1 cup quinoa
  • 2 cups nonfat milk
  • 1 pinch salt
  • 3 tablespoons maple syrup
  • 0.5 lemon, zested
  • 1 cup blueberries
  • 2 teaspoons flax seed
Instructions:
  • Thoroughly rinse quinoa in a fine strainer under cold water until the water is clear and not frothy to remove bitterness.
  • In a saucepan, gently warm milk over medium heat for 2 to 3 minutes. Add quinoa and salt, then simmer over medium-low heat for about 20 minutes until most of the liquid is absorbed. Remove from heat and stir in maple syrup and lemon zest. Gently fold in blueberries.
  • Split the quinoa mixture evenly into 2 bowls and garnish each serving with 1 teaspoon of flax seeds.
