Make ahead blueberry-lemon Dutch baby batter for a quick and delicious treat post-dinner or Christmas morning.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 cup milk
  • 3 tablespoons Stevia In The Raw® Bakers Bag
  • Finely grated zest of 1 lemon
  • 0.5 teaspoon vanilla
  • 0.25 teaspoon fine sea salt
  • 2 tablespoons unsalted butter
  • 1 cup fresh blueberries
  • Powdered sugar, for serving
Instructions:
  • In a blender, mix flour, milk, eggs, stevia, lemon zest, vanilla, and salt until smooth. Let the batter rest in the blender for 30 minutes.
  • Preheat your oven to 425 degrees F and place a 9-inch cast iron skillet inside to heat up.
  • Prepare to bake by melting butter in a hot skillet, swirling it around to cover the pan. Pour in the batter, swiftly sprinkle blueberries on top, and bake until puffed and golden, for 15 to 20 minutes.
