Decadent blueberry bars with a buttery cookie crust and sweet streusel topping.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons lemon zest
  • 1 pinch salt
  • 0.5 cup butter, chilled and diced
  • 2 cups fresh blueberries
  • 0.25 cup white sugar
  • 0.125 teaspoon ground nutmeg
  • 5 tablespoons butter, softened
  • 0.5 cup packed brown sugar
  • 0.75 cup all-purpose flour
  • 0.25 cup confectioners' sugar for dusting
Instructions:
  • Preheat your oven to a toasty 400°F (200°C) and generously grease a 9x13 inch baking pan.
  • To begin, prepare the crust by combining 2 cups of flour, 2 tablespoons of white sugar, lemon zest, and salt in a medium bowl. Add 1/2 cup of butter and mix until the mixture looks like coarse crumbs. In a separate bowl, beat an egg with vanilla extract and stir it into the crumb mixture until a dough forms. Press the dough into the bottom of the pan.
  • Bake until golden brown in the preheated oven for 12 to 15 minutes. Allow to cool slightly before serving.
  • Sprinkle a generous amount of blueberries onto the crust. Mix 1/4 cup sugar and nutmeg, then sprinkle over the blueberries. For the topping, cream together 5 tablespoons of butter and brown sugar until smooth in a medium bowl. Add flour and mix until crumbly like streusel. Sprinkle this topping over the blueberry layer.
  • Bake in a preheated oven for 20 to 25 minutes until golden brown. Allow to cool, then sprinkle with confectioners' sugar before slicing into bars.
