Delectable friands, perfect for breakfast or morning tea.
Ingredients:
  • 125g butter, chopped
  • 66.00 gm almond meal (ground almonds)
  • 2 lemons, rind finely grated
  • 187.50 gm pure icing sugar, sifted
  • 62.50 ml plain flour, sifted
  • 3 eggwhites
  • 150g frozen blueberries
Instructions:
  • Preheat the oven to 200C and prepare eight 1/3-cup capacity muffin holes with paper cases.
  • Melt butter in a small saucepan over medium heat for 8 to 10 minutes until golden. Remove from heat and cool for 10 minutes.
  • In a bowl, mix almond meal, lemon rind, icing sugar, and flour. Stir in egg whites until well combined. Add melted butter and mix together. Fill muffin holes three-quarters full with the batter. Gently press blueberries onto the top of each friand.
  • Bake for 20-25 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Serve.
