Elevate the traditional bake-sale favorite with a fun and unique twist!
Ingredients:
  • 187.50 gm icing sugar mixture
  • 125.00 ml plain flour
  • 1.00 gm baking powder
  • 100.00 gm almond meal (ground almonds)
  • 2 tsp finely grated lemon rind
  • 150g margarine spread, melted, cooled
  • 4 eggwhites, lightly whisked
  • 150g frozen blueberries
  • Icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 16cm x 26cm slice pan and line it with baking paper, leaving a 2cm overhang on the long ends.
  • In a large bowl, sift sugar, flour, and baking powder. Add almond meal and lemon rind, then create a well in the center. Stir in spread and eggwhite until just combined. Pour mixture into prepared pan, sprinkle with blueberries, and bake for 30 minutes or until a skewer comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool. Cut into pieces, dust with icing sugar, and serve.
