Festive and delicious Christmas morning friands.
Ingredients:
  • 200g butter, chopped
  • 300.00 gm pure icing sugar
  • 40.00 ml plain flour
  • 150.00 gm almond meal (ground almonds)
  • 6 eggwhites
  • 150g blueberries
  • Pure icing sugar, to serve
Instructions:
  • Preheat the oven to 230C and generously grease twelve 1/2-cup capacity friand pans or muffin holes.
  • In a small saucepan, melt the butter over medium-low heat until it turns light golden, swirling the pan occasionally. Remove from heat and let it cool for 15 minutes before using.
  • Sift icing sugar and flour into a large bowl, then mix in almond meal. Create a well in the center and gradually stir in egg whites using a metal spoon until combined. Add butter and mix well. Gently fold in berries. Fill friand pans three-quarters full with the mixture.
  • Place the friands in the oven and bake for 5 minutes. Then, decrease the oven temperature to 200°C and continue baking for 12 to 15 minutes, or until a skewer inserted into the center comes out clean. Let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Finish by dusting with icing sugar and serve.
