Mini blueberry friands recipe

Make ahead friands: Ideal for lunches and teatime!
Ingredients:
  • 120g icing sugar mixture
  • 60g almond meal
  • 35g plain flour
  • 90g butter, melted
  • 3 Free Range Egg whites
  • 62.50 ml fresh or frozen blueberries
Instructions:
  • Preheat your oven to 180°C, then generously grease 18 holes using two 1½-tbs (30ml) mini muffin pans.
  • In a bowl, mix icing sugar, almond meal, and flour. Add butter and egg whites, then stir until well combined. Spoon the batter into the prepared pans and top with blueberries.
  • Bake until the friands are lightly golden and cooked through, about 15 minutes. Then, transfer them to a wire rack to cool completely before storing in an airtight container at room temperature for up to 3 days.
