Delicious pizza with Gruyere and blue cheeses, bacon, onion, and sweet blueberries on mini naan flatbreads.
Ingredients:
  • aluminum foil
  • 3 slices bacon
  • 4 mini naan flatbreads
  • 1.25 cups shredded Gruyere cheese, divided
  • 0.5 cup crumbled blue cheese
  • 0.25 cup thinly sliced red onion
  • 1 cup fresh blueberries
  • 0.25 cup thinly sliced fresh basil
  • freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 425°F (220°C) and line a baking sheet with aluminum foil.
  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until crispy and browned all over, about 10 minutes. Drain on paper towels and crumble once cooled.
  • Sprinkle half of the Gruyere cheese on the naan flatbreads, keeping a 1/2-inch border. Add blue cheese and red onion, then transfer to the baking sheet.
  • Bake the flatbreads until they start to brown, for about 7 to 9 minutes. Take them out of the oven, sprinkle with blueberries, bacon, and the rest of the Gruyere. Bake until the cheese melts, and the flatbreads turn golden brown, which takes around 2 minutes. Finish by topping them with sliced basil and black pepper. Serve right away.
