Air Fryer Mini Blueberry Scones with Orange Sugar Topping - A quick and delightful treat for brunch in 30 minutes!
Ingredients:
  • 1 cup all-purpose flour
  • 4 tablespoons white sugar, divided
  • 1.5 teaspoons baking powder
  • 0.125 teaspoon baking soda
  • 0.125 teaspoon salt
  • 2 tablespoons butter
  • 1 egg
  • 0.25 cup buttermilk
  • 0.5 teaspoon vanilla extract
  • 0.25 cup fresh blueberries
  • 2 teaspoons orange zest
Instructions:
  • Preheat the air fryer to 360°F (180°C) for optimal cooking results.
  • In a medium bowl, combine flour, 2 tablespoons of sugar, baking powder, baking soda, and salt. Use two knives or a pastry blender to cut in the butter until the mixture resembles coarse crumbs.
  • Whisk egg in a small bowl. Reserve 2 tablespoons of the egg in a separate bowl. Add buttermilk and vanilla extract to the remaining egg; mix until well combined. Fold the egg mixture into the flour until just moistened. Carefully fold in the blueberries.
  • Place the dough on a floured surface and knead gently until smooth, about 8 to 10 strokes. Shape the dough into a 6-inch circle and cut into 8 wedges with a floured knife without separating them.
  • Mix the 2 remaining tablespoons of sugar and orange zest in a small bowl. Brush the top of the dough with the reserved egg and sprinkle it with the sugar mixture. Separate the dough wedges and gently place them in a single layer in the air fryer basket using a small wide spatula, working in batches if needed.
  • Bake scones until beautifully golden, approximately 6 minutes. Serve piping hot.
