Delicious air-fried mini peppers stuffed with cheesy sausage - perfect for any gathering!
Ingredients:
  • 8 ounces bulk Italian sausage
  • 1 (16 ounce) package miniature multi-colored sweet peppers
  • 2 tablespoons olive oil, divided
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup shredded Cheddar cheese
  • 2 tablespoons crumbled blue cheese
  • 1 tablespoon finely chopped fresh chives
  • 2 tablespoons panko bread crumbs
Instructions:
  • In a large nonstick skillet over medium-high heat, cook and stir the sausage until browned and crumbly, about 5 to 7 minutes. Discard the grease and set the sausage aside.
  • Heat up your air fryer to 350 degrees Fahrenheit (175 degrees Celsius).
  • Make a long vertical cut along one side of each sweet pepper from stem to tip. Coat the peppers with 1 tablespoon of olive oil and arrange them in the air fryer basket.
  • Place the peppers in the preheated air fryer and cook for 3 minutes. Then, shake the basket and continue to cook until the peppers start to brown and soften, about 3 more minutes. Remove the peppers and let them cool slightly before handling, keeping the air fryer on.
  • Combine sausage, cream cheese, Cheddar cheese, blue cheese, chives, garlic, and black pepper in a medium bowl. Mix bread crumbs with remaining olive oil in a small bowl while peppers cool.
  • Fill each pepper with the cheese mixture and top with bread crumbs. Arrange the stuffed peppers in the air fryer basket, making sure not to overcrowd, and air fry for 4 to 5 minutes until the filling is warm and bread crumbs are crispy. Let them cool slightly before serving.
