Breakfast quinoa with berries and pistachio

Start your day with a delicious and gluten-free berry breakfast bowl!
Ingredients:
  • 150g (1/2 cup) cooked quinoa
  • 1.25 gm ground cinnamon
  • 80ml (1/3 cup) cranberry juice
  • 90g (1/3 cup) natural yoghurt
  • 125.00 ml fresh berries, to serve
  • 2 tsp chopped pistachios
Instructions:
  • In a small saucepan, merge the quinoa with the cinnamon, cranberry juice, and 2 tablespoons of water. Heat over medium heat until it comes to a boil. Then, lower the heat and simmer for 2-3 minutes until most of the liquid is absorbed.
  • Transfer the quinoa mixture into a bowl. Drizzle with yogurt and garnish with fresh berries and pistachios.
