Start your day with a delicious bowl of protein-packed quinoa topped with juicy tropical fruits for a taste of paradise.
Ingredients:
  • 1 can (20 oz) pineapple chunks in unsweetened juice
  • 1 cup uncooked quinoa
  • 1/4 cup unsweetened shredded coconut
  • 1 cup reserved pineapple liquid
  • 1 cup milk
  • 2 tablespoons honey
  • 1 cup frozen raspberries
  • 1/4 cup chopped almonds
  • Additional unsweetened shredded coconut for garnish
Instructions:
  • Preheat the oven to 350°F and lightly grease an 8x8-inch square pan with cooking spray.
  • Separate pineapple from its juice, saving 1 cup. Keep pineapple aside.
  • Combine quinoa and coconut in a small bowl and then spread the mixture evenly in a pan. In the same bowl, whisk together eggs, pineapple liquid, milk, and honey until well combined.
  • Sprinkle pineapple chunks, raspberries, and almonds evenly over the quinoa mixture. Pour the egg mixture evenly over the top. Gently press the fruit down with the back of a spoon to submerge it in the liquid. Sprinkle with additional coconut on top.
  • Roast in the oven for 60 minutes.
