Banana Mango Muffins with Lime Glaze

Blend mango and banana into muffin batter for a tropical breakfast delight.
Ingredients:
  • 1 ripe mango, peeled and pitted
  • 3 ripe bananas
  • 0.66666668653488 cup brown sugar
  • 0.5 lime, juiced
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground allspice
  • 0.5 cup butter, at room temperature
  • 3 large eggs
  • 1 cup confectioners' sugar, or as needed
  • 1 tablespoon water, or as needed
  • 1 teaspoon lime juice, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and place paper liners in 18 muffin cups.
  • Combine ripe mangoes, sweet bananas, rich brown sugar, and tangy lime juice in a blender and blend until silky smooth.
  • Combine flour, baking soda, baking powder, cinnamon, nutmeg, and allspice in a bowl. Gently fold in butter, eggs, and mango-banana mixture until just incorporated. Fill muffin cups with batter.
  • Bake in the preheated oven for 25-30 minutes until a toothpick inserted in the center of a muffin comes out clean. Let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Combine confectioners' sugar, water, and 1 teaspoon lime juice, whisk until the glaze is smooth and thick, then spoon over cooled muffins.
