Tropical pineapple banana bread with maraschino cherries is a vibrant, sweet delight perfect for brunch or dessert.
Ingredients:
  • 0.5 cup brown sugar
  • 0.25 cup butter, softened
  • 0.25 cup applesauce
  • 2 egg whites
  • 1 cup mashed ripe bananas
  • 0.5 teaspoon ground cinnamon
  • 2 cups self-rising flour
  • 0.5 cup buttermilk
  • 1 (8 ounce) can crushed pineapple, drained
  • 0.5 cup chopped maraschino cherries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while generously greasing two 8x4-inch loaf pans.
  • In a bowl, use an electric mixer to combine white sugar, brown sugar, butter, and applesauce until light and fluffy. Add egg and egg whites, then mix in bananas, vanilla extract, and cinnamon. Incorporate flour and buttermilk alternately, mixing until well combined, then gently fold in pineapple and cherries. Pour the batter into the prepared pans.
  • Bake in the preheated oven for 45 to 55 minutes or until a toothpick inserted into the center comes out clean. Let it cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
