Elevate classic pineapple upside-down cake with extra cherries and pineapple for a flavorful and moist treat, ideal when served warm or at room temperature.
Ingredients:
  • 0.5 cup butter
  • 1 cup packed brown sugar
  • 1 (14 ounce) can pineapple slices, drained and juice reserved
  • 15 maraschino cherries, or more to taste
  • 1 (14 ounce) can crushed pineapple, drained and juice reserved, divided
  • 1 (15.25 ounce) package cherry chip cake mix
  • 1 cup juice from canned pineapple
  • 3 eggs, lightly beaten
  • 0.5 cup melted butter
  • 1.5 fluid ounces rum
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect cooking environment.
  • Place 1/2 cup of butter into a 9x13-inch cake pan and melt in the preheated oven. Then, brush the sides of the pan with some of the melted butter.
  • Sprinkle brown sugar gently over the melted butter in the pan. Arrange pineapple rings over the sugar-butter layer. Position maraschino cherries in the center of each pineapple ring and decorate to your liking. Set aside 1/2 cup crushed pineapple, then fill any gaps with the rest of the crushed pineapple to cover the entire pan. Make sure to drain the reserved crushed pineapple thoroughly.
  • In a large bowl, mix together cake mix, 1 cup pineapple juice, eggs, and 1/2 cup melted butter using an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Add rum and the reserved 1/2 cup crushed pineapple, stir well. Pour batter into prepared pan and smooth with a spatula.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the middle comes out clean without touching the bottom of the cake.
  • Once the cake is out of the oven, swiftly run a knife around the edge of the pan to loosen it. Let it cool in the pan briefly. Then, place a serving platter upside-down over the pan while the cake is warm. Gently flip both together and keep the pan on for a couple of minutes. Carefully remove the cake pan.
