Whip up a delicious cranberry pineapple quick bread - perfect for sharing or gifting!
Ingredients:
  • 4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 3/4 cup oil
  • 1 tablespoon vanilla
  • 4 eggs
  • 1 (8-oz.) can crushed pineapple in unsweetened juice, undrained
  • 1 (10-oz.) jar maraschino cherries, quartered, well drained
  • 2 teaspoons powdered sugar
Instructions:
  • Preheat the oven to 325°F. Grease and flour only the bottoms of two 8x4-inch loaf pans. In a large bowl, mix together flour, sugar, baking soda, and salt. Stir in oil, vanilla, eggs, and pineapple with its juice using an electric mixer on low speed until just combined. Gently fold in the cherries. Divide the batter between the prepared loaf pans.
  • Preheat your oven to 325°F and bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Let the loaves cool in the pans for 10 minutes before transferring to wire racks. Once cooled completely, sprinkle with powdered sugar.
