Grilled chicken transformed into a vibrant summer salad, ideal for outdoor dining.
Ingredients:
  • 1 barbecued chicken
  • 1/4 pineapple, peeled, core removed, sliced into thin wedges
  • 3 green onions, thinly sliced
  • 250g punnet cherry tomatoes, halved
  • 250.00 ml mint leaves, torn
  • 1 Lebanese cucumber, sliced
  • 125.00 ml roasted salted cashew nuts
  • 100g salad leaves
  • 2 limes, cut into wedges
Instructions:
  • Separate tender chicken meat from bones, disposing of the skin and bones. Finely shred the juicy chicken and transfer it into a spacious bowl.
  • Combine the pineapple, onions, tomatoes, mint, cucumber, cashews, and Asian salad greens with the chicken, gently toss everything together, then spoon into serving bowls and serve with lime wedges.
