Gluten-Free Tropical Chicken Salad

Tropical low-fat chicken salad - Say goodbye to boring chicken!
Ingredients:
  • 1 lb boneless skinless chicken breasts, cut into 1/2-inch strips
  • 2 tablespoons gluten-free blackened seasoning blend
  • 1 tablespoon canola or vegetable oil
  • 1 bag (5 oz) mixed baby salad greens (4 cups)
  • 1 medium mango, peeled, pitted and diced (1 cup)
  • 1/2 medium red onion, sliced (3/4 cup)
  • 1 small red bell pepper, chopped (1/2 cup)
  • 2/3 cup raspberry vinaigrette
Instructions:
  • Place the chicken in a sturdy resealable plastic bag. Sprinkle the seasoning blend over the chicken, seal the bag, and shake well until the chicken is evenly coated.
  • Heat oil in a 10-inch nonstick skillet over medium-high heat. Add chicken and cook for 7 to 10 minutes, stirring frequently, until the center is no longer pink. Remove chicken from skillet and drain on paper towels.
  • Combine the salad greens, mango, onion, and bell pepper in a large bowl. Separate the mixture onto 4 plates. Add chicken on top and drizzle with vinaigrette.
