Create a healthier fruit and nut ice cream at home - delicious!
Ingredients:
  • 450g lite chocolate ice cream
  • 82.50 ml dried currants
  • 75g slivered almonds, toasted
  • 450g lite vanilla ice cream
  • 20g red glace cherries, chopped
  • 100g dried pineapple
  • raspberries to serve
Instructions:
  • Allow the 450g of light chocolate ice cream to soften in a bowl for approximately 20 minutes. Mix in 1/3 cup of dried currants and 75g of toasted slivered almonds. Transfer the mixture into 6 x 1 cup dariole moulds or muffin pans. Freeze until solid.
  • Allow the 450g lite vanilla ice cream to soften in a bowl for approximately 20 minutes. Mix in 120g chopped red glace cherries and 100g dried pineapple. Transfer the mixture into molds, smooth the top, and freeze for 3-4 hours until it is solid.
  • Quickly immerse the moulds in hot water for 10 seconds, then flip them onto serving plates. Garnish generously with fresh raspberries before serving.
