Wholesome apricot slice, a light and satisfying dessert.
Ingredients:
  • 30g piece carob block, finely chopped
  • 100g dried apricots, quartered
  • 100g sultanas
  • 100g raisins
  • 50g unsalted dry-roasted peanuts
  • 40g (1/4 cup) plain flour, sifted
  • 30g (1 cup) rice bubbles
Instructions:
  • Preheat the oven to 180°C and line a 19cm square slab pan with non-stick baking paper on the base and sides.
  • Melt the carob in a small heat-resistant bowl placed in a medium bowl of very hot water, stirring until smooth. Set aside.
  • Combine apricots, sultanas, raisins, and peanuts in a food processor. Pulse until finely chopped and sticky. Transfer mixture to a medium bowl.
  • Combine the melted carob, flour, and rice bubbles by hand until fully mixed. Press the firm mixture evenly into the lined pan using your hands.
  • Bake until light golden in a preheated oven. Let cool in the pan before slicing into squares.
