Apricot and Date Bars

Indulgent fruit and nut cobbler bars made effortlessly with Betty Crocker® snickerdoodle cookie mix.
Ingredients:
  • 2 cups orange juice
  • 3/4 cup chopped pitted dates
  • 3/4 cup chopped dried apricots
  • 1/2 cup dried cherries
  • 1/3 cup apricot jam
  • 1 pouch (17.9 oz) Betty Crocker™ Snickerdoodle Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 3/4 cup chopped pecans
Instructions:
  • Combine orange juice, dates, apricots, and cherries in a 2-quart saucepan. Bring to a boil over medium heat, then cover, remove from heat, and allow to sit for 30 minutes. Drain the fruit and mix with apricot jam in a small bowl.
  • Preheat oven to 350°F and grease a 13x9-inch pan with cooking spray. In a large bowl, combine cookie mix and cinnamon-sugar packet. Use a pastry blender or 2 table knives to cut in the butter until the mixture resembles coarse crumbs. Set aside 1 1/2 cups of the crumb mixture. Press the remaining mixture into the bottom of the pan and bake for 10 minutes or until lightly golden brown. Allow it to cool before proceeding.
  • Spread the fruit mixture over the partially baked crust and then cover it with a delicious combination of the reserved crumb mixture and pecans.
  • Bake until golden brown for 25 to 30 minutes. Allow to cool fully in the pan on a rack for about 1 hour. Cut into 6 rows by 4 rows.
