Whip up some date, apricot, and chia bliss balls for a delightful bite-size snack.
Ingredients:
  • 75g dried apricot
  • 70g date
  • 20.00 ml white chia seeds
  • 20.00 ml pepitas (pumpkin seeds)
  • 20.00 ml Crunchy Almond Spread
  • Desiccated coconut, extra, to coat
Instructions:
  • Place the apricots in a heatproof bowl and cover with boiling water. Allow them to soak for 15 minutes, then drain well.
  • Combine apricots, dates, coconut, chia seeds, pepitas, and almond spread in a food processor. Blend until a smooth paste forms. Chill in the refrigerator for 30 minutes or until the mixture firms up.
  • Prepare a baking tray by lining it with baking paper. Form 2 teaspoonfuls of the mixture into a ball, gently coat with extra coconut, and place on the prepared tray. Repeat this process with the rest of the mixture. Chill in the fridge for 1 hour to allow the balls to set.
