Creamy cardamom & raisin quinoa pudding

Nutty quinoa breakfast with Sunbeam Slivered Almonds for a healthy start.
Ingredients:
  • 772.50 gm milk
  • 125.00 ml white quinoa, rinsed, drained
  • 40.00 gm caster sugar
  • 3/4 tsp ground cardamom
  • Pinch of salt
  • 82.50 ml Raisins
  • 30.00 ml Slivered Almonds, toasted
  • 30.00 ml Pistachios, halved, toasted
  • Honey, to drizzle
Instructions:
  • In a large saucepan over high heat, combine milk, quinoa, sugar, cardamom, and salt. Stir until sugar dissolves and bring to a boil. Reduce heat, partially cover with a lid, and simmer for 20 minutes, stirring occasionally. Add Sunbeam raisins and simmer for an additional 5 minutes. Allow to cool and thicken before serving.
  • Garnish with Sunbeam almonds and pistachios, then generously drizzle with honey before serving at room temperature or chilled.
