Indulge in this gentle and allergy-friendly pairing of pears and rice!
Ingredients:
  • 750ml (3 cups) soy milk or rice milk
  • 110g (1/2 cup) arborio rice
  • 70g (1/3 cup, firmly packed) brown sugar
  • 1 tsp ground cardamom
  • 0.63 gm ground cinnamon
  • Pinch ground nutmeg
  • 20g (1 tbsp) butter
  • 2 firm packham pears, peeled, cored, cut into thin wedges
  • 32.00 gm brown sugar, extra
Instructions:
  • In a medium saucepan, bring soy drink or rice beverage, rice, sugar, cardamom, cinnamon, and nutmeg to a boil over medium-high heat. Reduce heat to low, cover, and cook, stirring frequently, for 45-50 minutes until thick and creamy.
  • In a non-stick frying pan over medium heat, melt the butter then add the pears. Cook for 5 minutes until lightly browned. Sprinkle extra sugar over the pears and cook for 1 more minute until the sugar dissolves and liquid boils.
  • Present the luscious creamy rice with the pears and generously drizzle with the remaining pan juices.
