Whisk together eggs with kale, harissa, bell peppers, and bacon for a bold and easy one-pan keto breakfast.
Ingredients:
  • 2 teaspoons olive oil
  • 1 red bell pepper, chopped
  • 0.5 onion, diced
  • 1 cup chopped kale, stems removed
  • 2 teaspoons harissa paste (such as CAVA brand)
  • 1 teaspoon minced garlic
  • 6 eggs, beaten
  • 3 slices cooked bacon, crumbled
  • 0.33333334326744 cup crumbled feta
  • 0.25 cup chopped pepperoncini peppers
Instructions:
  • In a nonstick pan over medium high heat, sizzle half of the oil. Toss in bell pepper and onion; sauté until pepper begins to caramelize, approximately 5 minutes. Pour in the rest of the oil. Mix in kale, harissa, and garlic, stirring until fully incorporated. Dial down the heat to medium and add a splash of water if desired.
  • Gently incorporate eggs into the kale mixture and cook, stirring often, until almost cooked, approximately 2 minutes. Add bacon, feta, and pepperoncini and heat everything through. Serve in a bowl or on a plate.
