Spice up your classic breakfast scramble with eggs, bacon, hash browns, and canned green chiles for a delicious and satisfying meal to kickstart your day!
Ingredients:
  • 3/4 lb bacon, cut into 1-inch pieces
  • 3 cups refrigerated cooked shredded hash brown potatoes (from 20-oz bag)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 3/4 cup shredded Cheddar cheese (3 oz)
  • 1 medium tomato, chopped
Instructions:
  • In a 10-inch nonstick skillet, crisp up bacon over medium heat for 5 to 7 minutes, stirring occasionally. Leave 2 tablespoons of drippings along with the bacon in the pan after draining.
  • Add deliciously starchy potatoes to the skillet and spread them out evenly. Cook for 8 to 10 minutes, stirring occasionally, until they turn a beautiful golden brown.
  • In a small bowl, whisk together eggs and chiles. Pour the mixture over the potatoes evenly. Cover and cook on low heat for 8 to 10 minutes until the eggs are set. Sprinkle with cheese and tomato, cover, and cook for an additional 2 to 4 minutes until the cheese is melted.
