Delicious Cheesy Ham Breakfast Skillet Hash: A hearty, flavorful, and simple brunch favorite that's the ultimate comfort food.
Ingredients:
  • 1 tablespoon butter
  • 1 cup diced onion
  • 1 cup diced red bell pepper
  • 1 1/2 cups water
  • 2 tablespoons vegetable oil
  • 1 box (7 oz) Betty Crocker™ Ham and Cheddar Potato Scrambles Kit
  • 8 oz diced cooked ham
  • 3 eggs, beaten
  • 2 teaspoons chopped fresh chives, if desired
Instructions:
  • In a nonstick skillet, melt butter over medium-high heat. Add onion and bell pepper; sauté until softened, stirring occasionally, for 3 to 5 minutes.
  • Combine water, oil, potatoes, and seasoning from the kit with vegetables in a skillet. Mix thoroughly. Bring to a boil, stirring occasionally. Cover, reduce heat to medium-low, and let simmer for about 12 minutes until most of the liquid is absorbed.
  • Turn up the heat to medium-high. Mix in the diced ham with the potato mixture and cook without a lid for 3 to 5 minutes, stirring occasionally, until the liquid is absorbed and the ham is heated through.
  • In the same pan, pour beaten eggs on the empty side. Cook for 1 to 2 minutes, stirring occasionally, until eggs are firm. Gently fold eggs into potato mixture and then remove from heat.
  • Gently massage the topping pouch to soften it, then cut it open. Drizzle the topping over the potato mixture and garnish with fresh chives.
