Cheesy ham and hashbrown breakfast burritos with a spicy kick, perfect for brunch or office gatherings. Prepare ahead and simply reheat for a quick and delicious meal.
Ingredients:
  • 1 (16 ounce) package frozen hash brown potatoes
  • 1 cup diced cooked ham
  • 1 tablespoon vegetable oil
  • 1 (4.5 ounce) can diced green chile peppers
  • 1.5 cups shredded Cheddar cheese, divided
  • 1 (28 ounce) can green chile enchilada sauce
  • 8 (10 inch) flour tortillas
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • In a skillet over medium-high heat, crisp up hash browns and ham in a tablespoon of oil. Add diced green chilies and a half cup of Cheddar cheese, and melt the cheese until gooey.
  • Prepare the baking dish by lightly coating it with a touch of enchilada sauce. Then, dip each tortilla in the sauce, fill it with the flavorful potato-ham mixture, and roll it up tightly. Arrange the rolled tortillas in the dish with the seam side down. Finish by drizzling the remaining sauce and cheese over the top before covering with foil.
  • Bake covered in a preheated oven for 20 minutes. Uncover and bake for an additional 10 minutes until lightly browned on top. Serve hot.
