Savor a tantalizing breakfast casserole featuring ham, veggies, cheese, and flour tortillas baked in a rich egg batter.
Ingredients:
  • 1 pound cooked ham, chopped
  • 0.75 cup sliced green onions
  • 0.75 cup chopped green bell peppers
  • 3 cups shredded Cheddar cheese, divided
  • 10 (7 inch) flour tortillas
  • 5 eggs, beaten
  • 2 cups half-and-half cream
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon garlic powder
  • 1 dash hot pepper sauce
Instructions:
  • Pulse ham in a food processor until finely ground. Combine with green onions and green peppers. Spread 1/3 cup of ham mixture and 3 tablespoons shredded cheese on each tortilla, roll them up, and arrange in a greased 9x13-inch baking dish with seam side down.
  • Combine eggs, cream, milk, flour, garlic powder, and hot pepper sauce in a medium bowl. Pour the mixture over the tortillas, cover, and chill in the refrigerator for 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C the next morning.
  • Place the casserole in a preheated oven and bake uncovered for 50 to 60 minutes until set. Sprinkle the remaining cup of shredded cheese on top and bake for an additional 3 minutes until the cheese melts. Allow it to sit for at least 10 minutes before serving.
