Indulge in a flavorful frittata for a satisfying breakfast. Combine eggs with cheese and veggies, then cook in a skillet.
Ingredients:
  • 8 eggs
  • 1/2 cup diced provolone or mozzarella cheese (2 oz)
  • 1/2 cup frozen corn
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup diced cooked ham (2 oz)
  • 1 tablespoon butter or margarine
Instructions:
  • Combine all ingredients, except ham and butter, in a medium bowl and mix well using a fork or wire whisk. Gently fold in the ham.
  • Melt butter in a 10-inch nonstick skillet over medium-low heat. Add the egg mixture to the skillet, cover, and cook for 14 to 17 minutes until the eggs are fully set in the center and lightly browned on the bottom. Invert onto a serving plate and enjoy!
